Clementine Bellinis

Happy New Year everyone. The festive season is behind us now but that does not mean the cheer and happiness has to remain in December or in 2015. There is still plenty to celebrate and enjoy. Tomorrow is the 12th Night and for anyone looking to share some seasonal cheer and drink, I recommend this warm treat made from clementines. There are always more ways to get the best of the seasonal produce that is around and there is nothing like enjoying the flavours and tastes that are around us now in the supermarkets, farm shops and gardens. So make the most of the cold evenings with this winter warmer. 

Clementine Bellinis:

 

Ingredients:

Clementines (around 1 and a half clementines per person)

Sugar

Cointreau

 Prosecco (or Champagne or Sparkling Wine)

 

1) Place your glasses in the refrigerator.

2) Squeeze clementines and place juice into a small saucepan.

3) Add a little zest from one of the fruits.

4) Stir in two dessert spoons of sugar and allow to bubble away happily for a couple of minutes.

5) Turn off the heat and add a dash (to taste) of orange liqueur, such as Cointreau.

6) Pour an inch or so of the syrup into the bottom of a glass and top up with chilled Prosecco, Champagne or sparkling wine.

7) Enjoy.
