Gingerbread Recipe

100g dark brown sugar

1tbs golden syrup

2tbs treacle

2tsp cinammon

2tsp ginger

1tsp nutmeg

2tsp water

100g butter

1tsp bicarbonate of soda

200g plain flour


1. Preheat the oven to 170 degrees C, or gas mark 3

2. Roughly line a large mixing bowl with cling film and set aside

3. Place the sugar, syrup, treacle, water and spices in a large saucepan, stir and heat until the mixture starts to boil

4. Remove the pan from the heat and, taking great care, use a metal whisk to mix the butter into the mixture

5. When fully combined, add the bicarbonate of soda and whisk again. At this point the mixture will change consistency, becoming paler and slightly thicker

6. Tip the flour into the mixture and stir thoroughly with a wooden spoon

7. Scrape the mixture into the mixing bowl (The cling film will stop the mixture from sticking to the sides of the bowl)

8. When cool, put the mixture in the fridge for around two hours to firm up

9. Sprinkle your worktop with flour and roll out the cooled mixture to a thickness of about 3mm

10. Bake for around 10 minutes or until the edges of the gingerbread shapes start to turn a slightly darker brown
