Mulled Wine Chocolate Cake

The festive season has arrived and with it, a lot of decadent food and drinks. Everyone has an extra bottle of mulled wine in the cupboard from last year and Tala have just the way to use. A slice of this mulled wine cake will win over anyone this Christmas and is pleasant change from the usual cakes available at this time of year. Here is a delicious recipe from Torie Jayne, who is a wonderful baker with a sweet tooth for delicious desserts. 

Gluten Free Mulled Wine Chocolate Cake recipe

Ingredients

210g Gluten free plain flour

75g cocoa powder, unsweetened

1 tsp bicarbonate of soda

1/2 tsp salt

225g unsalted butter, softened

150g light brown sugar

100g dark brown sugar

100g caster sugar

2 large eggs

2 tsp vanilla extract

300ml mulled wine

Equipment

Tala Performance Bakeware Springform Cake Tin 20cm

1) Preheat oven to 170C degrees

2) Grease or spray tin with cake release spray

3) In a food mixer with a paddle attachment, beat butter and sugars until light and fluffy

4) Beat in eggs one at a time to butter mix, beating well after each addition

5) Beat in vanilla extract

6) In a separate bowl, sift flour, cocoa powder, bicarbonate of soda and salt

7) Gradually add flour mix and mulled wine alternating between the two, beating slowly between each addition until just combined. Scrape down bowl as needed

8) Scrape the mixture into the prepared tin and smooth the top

9) Bake for about 45-50 mins until a cake tester inserted into the center comes out clean

10) Allow cake to cool in the tin placed on a wire rack for about 15mins

11) Then turn cake out of tin and let it cool completely on a wire rack

Mascarpone Vanilla Icing Ingredients 

375g mascarpone cheese

175g icing sugar

Place the mascarpone cheese, vanilla extract and icing sugar in a bowl and whisk till light and fluffy

To Decorate

When cake is completely cooled, spread icing on top and scatter with edible gold balls.
