Spiced Cookie Recipe

Christmas trees are going up this weekend and everyone loves a tasty treat as they are decorating. For families, little ones will enjoy this recipe and will enjoy placing spiced biscuits all around the tree. This recipe is taken from Tala's Festive Cook's Measure that is being sold at John Lewis.  For tree decorations, use a drinking straw, before baking to make a hole in each biscuit and tie a loop of Festive ribbon around them to make extra-special Christmas decorations. 

 

Spiced Christmas Cookies


Ingredients 

200g sifted plain flour

75g butter 

150g soft light brown sugar 

1 1/2 tsp baking powder

1/2 tsp salt 

1/4 tsp cinnamon 

1/4 tsp mixed spice

1 tsp vanilla extract

1 egg, beaten 

1 tbs cream

Red, green and white coloured ready-to-roll icing 

Small quantity of royal icing (see Festive Measure for quantity)

Method 

1) Cream the butter in a large mixing bowl and beat in the sugar until light and fluffy. 

2) Beat in the egg with the vanilla extract and cream. 

3) Mix half of the plain flour with the baking powder, salt and spices. 

4) Stir this into the mixture then add the remaining flour to make a dough stiff enough to roll. Turn out and knead briefly, on your work surface if it is easier. 

5) Wrap the dough in cling film and chill in the refridgerator for at least an hour. 

6) Preheat oven to 180°C / 355°F. 

7) Roll out the dough on a lightly floured surface to a thickness of about 3mm. Use a selection of Tala Christmas cutters to cut out the biscuits. Place slightly apart on a tray covered with baking parchment and bake for 8-10 minutes. 

8) Allow to cool on a wire rack before decorating. 

9) To decorate, roll out the coloured icing and using the same cutters, cleaned asnd dried, cut out icing shapes and allow them to dry for a few minutes. 

10) Attach the icing shapes to the cookies with a small amount of brushed-on cooled boiling water. 

11) Use a piping bag equipped with a no.2 nozzle to pipe dots and details here and there. Allow the icing to set before packaging them away. 

12) Serve to friends and family or place on the Christmas tree. Enjoy with a warm glass or milk or mulled wine.
