Strawberry Fairy Cakes

As the sun is shining and we are welcoming in a new season, these is nothing as refreshing as a simple recipe to keep the littles ones busy. Strawberry fairy cakes are a good place to start and a good recipe to add fruit to for decorations. Ingredients

  • 250g/9oz butter
  • 250g/9oz caster sugar
  • 4 small eggs
  • 310g/11oz self-raising flour

Decoration

  • 120g/4oz butter
  • 250g/9oz icing sugar
  • 6 drops of strawberry flavouring
  • A little red food colouring
  • A little strawberry jam
  • Silver Balls
  • A little icing sugar

Serves 8 – 12

Method

  • Preheat oven to 190°C/375°F/gas mark 5.

 

 

 

  • To decorate, make the strawberry butter icing by creaming together the butter, icing sugar, strawberry flavouring and colouring in a Tala mixing bowl.

 

  • When soft and well incorporated, spoon into a piping bag with a star nozzle.

 

  • Using a knife, remove the top half of the cupcake and place aside.

 

  • Using a Tala cupcake corer, remove the centre of each cake and spoon a little jam into each cake then pipe a swirl of pink butter icing into it.

 

  • Cut the circles (that you had cut off the cupcakes) and arrange the two half circles on the icing in the shape of butterfly wings.

 

  • Decorate each cake with a silver ball and dredge with icing sugar. 

Serve and enjoy the delicious results.
