Summer Biscuits Recipe

if you have time for a spot of afternoon baking, why not try making these sugared, lightly spiced biscuits, which are perfect for summer-time lunchboxes


Summer Biscuits




125g softened butter

75g caster sugar

1 egg

200g plain flour

¼ tsp cinnamon

¼ tsp ginger

75g currants

1tsp milk


Extra flour for rolling out

Extra egg to brush biscuits before baking

Extra sugar to sprinkle over biscuits before baking





Large bowl

Small bowl

Two baking trays

Greaseproof paper

Cooks' Measure

Measuring spoon (1tsp)

Kitchen spoon

Rubber spatula

Rolling pin

Pastry brush

Cooling rack

Cookie cutters in various shapes


  1. Cut grease proof paper to line two baking trays.
  2. Measure out all the ingredients.
  3. In a large bowl cream butter and sugar with a rubber spatula.
  4. Beat in the egg.
  5. Tip spices and currants into the flour and stir.
  6. Tip the flour mixture into the creamed butter, sugar and milk, stir again.
  7. Add the milk carefully, bit by bit, until the dough comes together.
  8. Sprinkle flour onto the work surface and roll out the dough to a thickness of 5mm.
  9. Cut out shapes and carefully lift onto baking trays leaving a space between each biscuit.
  10. Brush each biscuit with egg and sprinkle with sugar.
  11. Bake for 10 minutes at 190 degrees Celsius.
  12. Remove from oven and allow to cool on the baking tray.
