Tala Olympic Gold Medals

As Olympic fever builds this week, why not throw a themed party with a variety of Olympic foods? The opening ceremony is tonight, so there is still time to gather some Olympic party decorations and to bake these delicious cookies that resemble Olympic medals for kids party snacks.

These edible Olympic medals can also be used for an Olympics themed birthday party. Winners for each sporty 'event' would receive a gold medal. And just so no-one feels left out, why not make party bags, by popping each medal into a Tala Crystalline treat bag,  tying with ribbon and presenting one to each mini athlete as they leave.

Ingredients

 

One quantity of cookie dough 

Plain flour for rolling-out

500g ready-to-roll icing (coloured yellow)

Icing sugar for rolling out

Spray can of edible gold lustre

 

Prep time: 25 minutes

Baking time: 15 minutes

Decorating time: 45 minutes

 

Total time: 1 hour 25 minutes

Method:

 

  • Preheat the oven to 170 degrees Celsius (338 degrees Fahrenheit). Sprinkle the work surface with flour and roll out the dough to a thickness of about 4-5mm. Choose a plain round cutter and cut out circles of dough. Gently lift onto the baking tray, spacing them out carefully to allow for any movement in the oven.

  • Use the end of a drinking straw to make a hole in the top of each cookie. Gather together the scraps, form into a ball and repeat until all of the dough is used up. Bake for 11-14 minutes, or until the cookies are golden brown around the edges. Leave to cool on a wire rack. 

  • Clean off the work surface and sprinkle it again, this time with icing sugar. Use the mini rolling pin to roll out the yellow icing as thinly as you can. Cut into circles using the same (carefully cleaned) cutter that you used to cut out the cookie dough. Use another straw to make small holes to go over the holes in the cookies.

  •  Transfer the icing circles to a piece of greaseproof paper and use the large nozzle to press circles into the icing to give the impression of the Olympic rings symbol. Gently spray the edible gold lustre over the circles to give them a wonderful golden sheen. Allow the lustre to dry slightly for a few minutes. Brush the surface of each cookie with cooled, boiled water, and then gently transfer each icing circle to the cookies, pressing down gently to stick them together.

  • Allow the icing to dry properly, ideally overnight, before threading a generous amount of ribbon through each cookie and tying the ends together. Serve and enjoy the delicious results.
