Tala's White Chocolate and Lemon Drizzle Pancake Cake

This pancake show stopper takes full advantage of the great affinity white chocolate and lemon have for each other.  It is very, very rich, so a little will go a long way. White chocolate ganache is much easier to work with when it has cooled a little, so make ahead of time and use when it reaches a spreadable consistency. I have topped my pancake cake with fresh roses and shop-bough white chocolates. Don't forget to double check that the flowers you choose are food safe and non-toxic.

Ingredients:

 

For the pancakes:

500g self-raising flour

750ml milk

5 eggs

50g butter, melted

A little vegetable oil

 

For the lemon drizzle:

Juice of 3 lemons

100g granulated sugar

30ml water

 

For the white chocolate ganache:

120ml single cream

400g white chocolate (buttons, or roughly chopped)

 

For the decoration:

Small box of white chocolates

A few fresh rose heads or non-toxic flowers of your own choosing

Method 

  • Place the flour in a large mixing bowl and make a well in the centre.
  • Tip in the eggs and flour and stir with a whisk until the batter is smooth and lump-free.
  • Whisk in the melted butter.
  • Place a medium size frying pan on the hob, and turn on a low heat.
  • While the frying pan heats up, place a large dinner plate next to the hob ready to stack up the pancakes when they are cooked.
  • Brush the bottom of the pan with a small amount of vegetable oil and tip in a ladleful of batter, tilting the pan from side to side until the bottom of the pan is thinly covered with batter.
  • When a few bubbles rise to the surface of the pancake and the batter appears to thicken, use a heatproof spatula to turn up the side of the pancake so that you can peep underneath. If the underside appears golden brown, it will be ready to turn.
  • Confidently flip over the pancake and wait until the underside is done (it will cook much faster than the other side).
  • Remove the pancake from the pan, and place on the plate next to the hob.
  • Brush a little more oil into the pan if you need to – you may not – and pour another ladleful of batter in the pan, repeating the process until you have a tall stack of pancakes and all the batter is used up.
  • Split the stack into three roughly equal mini stacks (to speed up the cooling process).

  • Pour the single cream into a small saucepan and gently bring to simmering point.
  • When the cream starts to boil, turn off the heat and carefully tip in the white chocolate.
  • Stir briefly and then allow the mixture to sit for a couple of minutes. Stir again until smooth.
  • Set aside the cream and white chocolate mixture to cool.
  • Place the lemon juice into a saucepan with the sugar and stir.
  • Heat gently until the sugar has dissolved and then allow the syrup to cool.
  • Once pancakes, syrup and ganache are cool, the assembly process can begin! At this point, the ganache should be a spreadable consistency, not too runny, but not entirely set either.

  • Place a large piece of cling film over a dinner plate, and lay the first pancake on top
  • Take a dessert spoon of lemon syrup and drizzle over the pancake
  • Place another pancake on top, and repeat the process until all of the pancakes in this mini stack are used up
  • Take a tablespoon of chocolate ganache and spread evenly over the top of this mini stack
  • Then reach for the next mini stack of pancakes and repeat the process, finishing with another layer of white chocolate ganache
  • Repeat with the final mini stack of pancakes, cover with cling film and chill the whole stack for about an hour, to stop it from sliding around
  • Remove from the fridge and, using a round ended palette knife, spread the remainder (which should be the majority) of the white chocolate ganache over the top and sides of the cake)
  • Chill again, until firm, then remove from the fridge, place on a cake stand, top with chocolates and fresh flowers 
  • Serve and enjoy the delicious results
