Chocolate fondant pudding

These puddings are the very last word in decadence and quite simply the easiest and most delicious pudding you will make this year. Ludicrously easy to make, they whip up in minutes and bake to perfection in 8 minutes flat. Enjoy with crème Fraiche or fully load them with clotted cream. If you must add fruit, fresh raspberries will compliment beautifully.
If you are using Tala Performance bakeware, you needn't prepare your molds but if you have standard pudding or dariole molds, butter them generously and dust with cocoa powder before use.

Ingredients

100g salted butter
100g dark chocolate
75g soft light brown sugar
3 free-range eggs
1 tbs plain flour
1 tbs cocoa powder
2 tsp vanilla extract
pinch salt
Equipment
1. Preheat the oven to 170 degrees Celsius (338 degrees Fahrenheit).

2. Place the butter in a small saucepan and heat gently, adding the chocolate after the butter has mostly melted, stirring now and then. Do not allow the chocolate to catch and turn off the heat when it has melted and the mixture is smooth.

3. Leave the saucepan for a minute, then stir in the sugar followed by the eggs and vanilla.

4. Whisk the flour, cocoa, and salt in a small mixing bowl, then transfer to the saucepan whisking again until smooth.

5. Divide the mixture equally between each of the pudding molds – don't worry about the depth of the liquid, the mixture will rise in the oven.

6. Bake for 8 minutes precisely – there will be a slight dip in the center of each pudding.

7. Remove from the oven and, cupping the pudding in one hand (carefully protected with a teatowel). Run a small sharp knife around the rim of the pudding, place the serving plate on top and swiftly flip, so the pudding is the right way round. Carefully lift up the mold and the pudding will be sitting proudly on the plate awaiting incision.

8. Serve and bask in the reflected admiration of your dinner guests as they cut into their puddings with their luscious molten interiors!
