Blood Orange Loaf Cake

Ingredients:
Loaf Cake
220g plain flour, sifted
3 large eggs
100g caster sugar
80ml vegetable oil
80ml blood orange juice
Zest of 1 blood orange
100ml Greek yogurt
3 teaspoon baking powder
Red food colouring (optional)
Icing:
100g icing sugar
2-3 tbsp water
Few drops of orange extract
To finish:
1 blood orange, sliced
Method:
- With an electric whisk, mix together the eggs, oil and sugar for a few mins.
- Add the yogurt, blood orange juice and zest, food colouring and mix.
- Fold in the flour and baking powder, previously sifted.
- Pour the mixture in a loaf tin, lined with greaseproof baking paper.
- Bake in a preheated oven to 180°C/160°C fan/gas mark 4 for 35-40 mins.
- Gently transfer to a cooling rack and let cool down completely.
- Make the icing by simply mixing together the ingredients then pour over the cake.
- Decorate with some blood orange slices.
- Enjoy!
