Blood Orange Loaf Cake

Loaf Cake

220g plain flour, sifted

3 large eggs

100g caster sugar

80ml vegetable oil

80ml blood orange juice

Zest of 1 blood orange

100ml Greek yogurt

3 teaspoon baking powder

Red food colouring (optional)



100g icing sugar

2-3 tbsp water

Few drops of orange extract


To finish:

1 blood orange, sliced



  1. With an electric whisk, mix together the eggs, oil and sugar for a few mins.
  2. Add the yogurt, blood orange juice and zest, food colouring and mix.
  3. Fold in the flour and baking powder, previously sifted.
  4. Pour the mixture in a loaf tin, lined with greaseproof baking paper.
  5. Bake in a preheated oven to 180°C/160°C fan/gas mark 4 for 35-40 mins.
  6. Gently transfer to a cooling rack and let cool down completely.
  7. Make the icing by simply mixing together the ingredients then pour over the cake.
  8. Decorate with some blood orange slices.
  9. Enjoy!
