Apple Cider Donut Cake

Equipment:

Ingredients:
300ml apple cider
120ml vegetable oil
80 ml milk
280g plain flour
3 teaspoons baking powder
100g soft brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground clove
4 large eggs

To finish
50g butter, melted
100g caster sugar
1&1/2 teaspoons ground cinnamon

Method:
1. Preheat the oven to 180°C/160°C/gas mark 4.
2. Pour the apple cider into a small saucepan. Bring to the boil, then let simmer until reduced to 120ml.
3. Sift the flour and baking powder. Add the rest of the dry ingredients and make a dwell in the centre.
4. Add the reduced apple cider, eggs, vegetable oil and eggs. Mix until well combined.
5. Pour the mixture into a bundt cake tin, previously buttered and covered with a thin layer of flour.
6. Bake in the preheated oven for 35 mins.
7. Leave to cool down on a wire rack.
8. Mix together the caster sugar and cinnamon. Set aside.
9. Brush the cake with the melted butter then coat with the cinnamon sugar.
