Berry Cheesecake Squares

Makes 16 squares

Equipment :

Ingredients:
200g digestive biscuits
100g unsalted butter, melted
250g cream cheese
300g double cream
250g mascarpone cheese
100g icing sugar
1&1/2 teaspoons vanilla extract
1&1/2 mixed berries, washed and chopped
3 tbsp caster sugar
2 tbsp water

Method:
1. Reduce the biscuits to crumbs, then fold in the melted butter and mix until combined.
2. Add he biscuit mixture to a 23cm x 23cm square tin, covered with clingfilm or greaseproof baking paper. Smooth it with a spatula, then chill for 30 mins.
3. In the meantime, make the berry sauce. Add the mixed berries, caster sugar, and water to a pan. Bring to the boil and leave to simmer for 10 mins. Pass through a sieve to remove the seeds. Leave to cool down.
4. Add the cream cheese, mascarpone, double cream, vanilla extraxt, and icing sugar to a mixing bowl and whisk for a few mins.
5. Add the cheesecake mixture to the biscuit base and smooth with a spatula.
6. Top with the berry ssuce and gently mix it in with a knife to create a marble effect.
7. Chill for 4 hours before serving.
8. Cut into 16 squares.
9. Serve and and enjoy!
