Classic Lemon Drizzle Loaf Cake

Lemon Drizzle Loaf Cake is a classic and delicious treat. Here's a simple recipe for you to try:


● 220g unsalted butter (softened)

● 220g caster sugar

● 4 large eggs

● 1 tsp vanilla extract

● 220g self-raising flour

● 2 lemons

● 150g icing sugar

1. First, preheat the oven to 160ºc fan and line a loaf tin with baking paper.

2. Beat together the butter and sugar for 5 minutes until light and fluffy. Add in the vanilla and eggs one at a time, mixing well between each addition.

3. Add in the zest and juice of one lemon.

4. Then, sift and fold in your flour until fully incorporated.

5. Pour the mixture into the tin and bake for 50-55 minutes, until golden and springs back when touched. Leave to cool completely.

6. Mix the icing sugar and juice of one lemon together until you get a thick but pourable icing. Spread over the loaf and top with lemon zest.
