Crispy Smashed Potato Salad
Crispy Smashed Potato Salad is a delicious twist on the traditional potato salad, combining crispy, smashed potatoes with fresh herbs, a tangy dressing, and optional add-ins for extra flavor. Here's how to make it:
Ingredients
● 750g baby potatoes
● 250g cooked bacon (lardons or diced streaky/back)
● Drizzle of olive oil
● Salt & pepper
● 4 heaped tbsp natural yoghurt
● 2 tbsp mayonnaise
● ½ tsp dijon mustard
● Juice of ½ lemon
● Handful chopped chives & parsley

Method
1. Boil the potatoes until fork tender (about 30 minutes). Then drain and spread onto a baking tray lined with parchment paper.
2. Use a glass or the bottom of a bowl to smash the potatoes flat. Drizzle with salt, pepper and olive oil and bake in the oven at 200ºc fan for 30-40 minutes until crispy.
3. Remove from the oven and cut into chunks. Then, mix together the rest of the ingredients in a bowl and add in your crispy potatoes. Give it all a stir and you’ve got a delicious BBQ side dish or a quick summer lunch!
