Ginger Banana Bread

Equipment:

Tala 1lb loaf tin

Loaf tin liner

Tala Measuring Spoons 

Tala Stoneware Mixing Bowl 

Tala Christmas Spatula 

 

Ingredients:

2 ripe bananas

1/3 cup coconut yoghurt

1/4 cup butter, melted

1/2 cup coconut sugar

1 tbsp maple syrup

1 tsp vanilla

3/4 cups spelt flour

1/2 cup ground almonds

1.5 tsp baking powder

1/4 tsp bicarb

Gingerbread spices, to taste (I used 1 tbsp cinnamon, 3/4 tsp ginger, 1/4 tsp mixed spice)

100g dark chocolate chips

Favourite cream cheese frosting to decorate

 

1.Preheat oven to 180C, then line your tin with liner.

2.Blend together all wet ingredients until smooth and frothy.

3.Stir together dry ingredients until combined, then fold in the banana mix.

4.Fold in choc chips, then pour into the loaf tin and bake until cooked through (this took 45 mins in my oven, but check at 30 minutes and cover if browning too fast).

5.Let cool completely, then have fun piping!
