
Honey Mustard Chicken Salad
A fresh spin on a comforting classic, this Honey Mustard Chicken Salad brings together juicy, golden pan-seared chicken with crisp greens, vibrant veg, and a tangy-sweet homemade honey mustard dressing that steals the show.

Ingredients:
2 chicken breasts
1-2 garlic cloves, minced
2-3 tbsp French mustard
2 tbsp oil
1 tbsp honey
1 lemon, juiced
Salt and pepper, to taste
1 romaine lettuce
1 red pepper
1 red onion
1 small cucumber
Salt and pepper, to taste

Method:
1. Add the garlic, mustard, oil, honey, lemon juice, salt and pepper to a small bowl and mix well until combined.
2. Use half the dressing to marinate the chicken breasts then bake in a preheated oven to 200°C/180°C fan for 20-25 mins. Once cooked, slice or chop.
3. Wash, drain, chop the vegetables. Add them to a large mixing bowl and toss with the remaining honey mustard dressing.
4. Place the salad onto a large serving plate. Add the chicken and drizzle with a little more dressing (optional).
5. Serve and enjoy!
