Lemon Shortbreads

Ingredients:
Shortbreads
150g unsalted butter, softened
90g caster sugar
250g plain flour
1 lemon, zest

To finish
50g white choc chips
1 lemon, zest

Method:
1. Preheat the oven to 180°C/160°C/gas mark 4.
2. Add the softened butter, sugar, flour and lemon zest to a large mixing bowl. Use your hands to gently bring the mixture together into a smooth dough. Cover with clingfilm and refrigerate for 30 mins.
3. On a lightly floured surface, roll the dough out to about 1cm thickness. Cut into rounds with a cookie cutter.
4. Bake for 12 minutes until pale golden brown.
5. Leave to cool down before decorating.
6. Melt the white chocolate chips then drizzle over the cookies. Finish with some lemon zest to decorate.
7. Serve and enjoy!
