Mini Banana Bread Baked Oats

Ingredients:

100g rolled oats

2 medium ripe bananas

2 large eggs

50ml oat milk

1 tbsp soft light brown sugar

1&½ teaspoons baking powder

1 teaspoon vanilla extract

40g dark chocolate chips

Butter, for greasing the ramekins

 

Equipment:

To finish

8 banana slices

 Method:

  1. Place all the ingredients, except for the chocolate chips, into a blender. Blend until smooth.
  2. Add the chocolate chips and mix.
  3. Equally divide the mixture between 8 ramekins, previously greased with some butter.
  4. Top each ramekin with a banana slice.
  5. Bake in a preheated oven to 180°C/160°C/gas mark 4 for 25 mins.
  6. Serve warm and enjoy!
