Mini Coffee Tiramisu
Rich espresso, velvety mascarpone, and delicate sponge layered into perfectly portioned little desserts -these Mini Coffee Tiramisus prove that the best things really do come in small packages. Inspired by the classic Italian favourite, they’re creamy, indulgent, and packed with bold coffee flavour, making them ideal for dinner parties, afternoon treats, or when you want something that feels a bit fancy without the restaurant price tag.

Ingredients:
150g savoiardi biscuits
250g mascarpone cheese
300ml double cream
3 tbsp icing sugar
1&1/2 teaspoon vanilla extract
2 tbsp caster sugar
2 tbsp cocao powder
200ml coffee, chilled

Method:
1. Make the coffee, sweeten it with 2 tbsp of caster sugar and let it cool down completely.
2. In a large mixing bowl add the mascarpone, double cream, vanilla extract and icing sugar. Mix with a whisk until well combined.
3. Add a layer of savoiardi biscuits to the ramekins. Wet with the coffee. Cover with a generous amount of mascarpone cream. Add another layer of savoiardi biscuits, coffee and mascarpone cream.
4. Dust with some cocao powder.
5. Transfer to the fridge and leave to set for 3-4 hours.
6. Serve and enjoy!
