Ingredients:
3 large eggs
3 cups of flour
2 cups milk
50g unsalted butter, melted plus extra for greasing
2 teaspoons baking powder
2&½ teaspoon vanilla extract
50g caster sugar
100g dark choc chips
150g strawberries, sliced
Maple syrup
Method:
- In a large mixing bowl, combine together the eggs and the sugar then add the milk, constantly stirring.
- In another bowl mix the flour and baking powder.
- Add the wet ingredients to the dry ingredients and combine fully.
- Add the melted butter and vanilla extract and mix.
- Finally fold in the chocolate chips.
- Leave to rest for 1 hour.
- Pour the pancake batter into a large baking tray previously greased with some butter.
- Top with the sliced strawberries then bake in a preheated oven to 180°C/160°C fan/gas mark 4 for 15 mins.
- Drizzle with maple syrup and serve while still warm.
