Snowball Truffles
Snowball Truffles would make an excellent addition to your Christmas baking essentials! These truffles can be made with a creamy white chocolate or coconut filling, rolled in shredded coconut or powdered sugar to mimic a snowy effect. They’re rich, indulgent, and have that perfect wintery aesthetic.
Prep time 35-40 mins, plus chilling time.

Ingredients:
1 cup self raising flour, sifted
1/2 cup desiccated coconut
1/2 cup caster sugar
1/2 cup vegetable oil
1/2 cup Greek yogurt
3 large eggs
1/2 teaspoon baking soda
1 teaspoon vanilla extract
To finish
2-3 tbsp Greek yogurt or cream cheese
3-4 tbsp icing sugar
100g desiccated coconut, for coating
Method:
1. Preheat the oven to 180°C/160°C fan/gas mark 4.
2. Add the flour, coconut, baking soda and sugar to a large bowl and mix.
3. Add the oil, vanilla, yogurt and eggs and mix until well combined.
4. Pour the mixture into a 23 cm x 23 cm square cake tin, previously greased with some butter and covered with a thin layer of flour. Bake for 30 mins or until a toothpick inserted in the centre comes out clean.
5. Transfer to a wire rack and leave to cool down completely.
6. Add the cake, yogurt (or cream cheese) and icing sugar to the bowl of a stand mixer and combine until you get a smooth dough.
7. Place the desiccated coconut onto a large plate. Set aside.
8. Scoop a heaped tablespoon of the mixture into your hands, then roll into a ball. Repeat until you make 35 cake balls.
9. Coat each cake ball in the desiccated coconut.
