Summer Pudding

Celebrate the best of British summer with this classic Summer Pudding. Bursting with juicy berries and wrapped in soft bread, it's a beautifully simple dessert that's as refreshing as it is delicious. Made using our Tala Pudding Basin, it's the perfect make-ahead treat for garden parties, family gatherings, or simply making the most of seasonal fruit.

Makes 4

Equipment:
Ingredients:
400g mixed berries
60g caster sugar
1 lemon, juiced
8-10 slices white bread, slightly stale

To finish:
Creme fresh or double cream
100g mixed berries
Icing sugar

Method:
1. Add the berries, sugar and lemon juice to a pan. Bring gently to the boil and let simmer for 5 mins.
2. Sieve the fruit over a bowl. Let both the fruit and the juice cool down.
3. Cut out 24 small disks and 4 big ones from the bread slices.
4. Dip the bread disks, one at a time, into the berry juice. Place one circle at the bottom of each mould, the rest around making sure not to leave any gaps.
5. Once the bowl is completely lined, spoon all of the fruit into the pudding basins, equally divided.
6. Cover the top of the fruit with a big bread circle, previously dipped in the berry juice.
7. Cover with clingfilm and refrigerate overnight.
8. Turn the puddings out onto dessert plates. Serve with creme freche or double cream and some fresh berries.
9. Dust with some icing sugar.
10. Serve and enjoy!
