Thumbnail Jam Biscuits
A classic favourite that never goes out of style, these Jam Biscuits are buttery, crumbly and filled with a deliciously sweet layer of jam. Simple to make and perfect alongside a cup of tea, they’re a lovely addition to any afternoon bake. Whether you’re baking for family, friends or simply treating yourself, these homemade biscuits are sure to disappear quickly.

Equipment:

Ingredients:
250g plain flour
100g caster sugar
150g unsalted butter, softened
1 teaspoon baking powder
1&1/2 teaspoon vanilla extract
1 egg
Pinch of salt
Strawberry jam

Method:
1. Preheat the oven to 200°C/180°C fan/gas mark 6.
2. Beat together the butter and the sugar until creamy.
3. Add the vanilla, egg and a pinch of salt and mix.
4. Fold in the flour and baking powder and work the mixture with your hands until you get a smooth but soft dough.
5. Measure out 1 tbsp of the mixture, then roll into a smooth ball. Repeat with the remaining dough.
6. Place the biscuits onto 2 large trays lined with greaseproof baking paper, leaving space between them.
7. Press each biscuit down with your thumb. Fill each biscuit with 1/2 teaspoon of strawberry jam or any jam of your choice.
8. Bake in the preheated oven for 10-12 mins.
9. Let cool down before serving.
