Valentine’s Sandwich Biscuits

Ingredients Biscuit:

● 215g plain flour

● 150g unsalted butter (softened)

● 60g caster sugar

● ½ tsp vanilla bean paste

● 3 tbsp freeze dried strawberry pieces

 

Filling/Topping:

● 80g strawberry chocolate (melted - any chocolate you want to use for dipping)

● 10g white chocolate (melted - again use any chocolate you want for the drizzle)

● 2 tbsp freeze dried strawberry pieces

Method

1. Beat together the butter, sugar and vanilla until combined.

2. Sift in the flour and strawberry pieces and mix until clumps begin to form and the mixture starts coming together. Then, tip onto a floured surface and knead/roll into a ball.

3. Roll out the dough to a 3-5mm thickness and cut out heart shapes. Place the hearts onto a lined baking tray, evenly spaced, and transfer to the fridge for at least 30 minutes and up to 2 hours.

4. Preheat your oven to 175ºc fan.

5. Bake the biscuits for 10-12 minutes until light golden brown.

6. Once the biscuits have cooled completely, flip half over and spread a spoonful of jam. Then, make a sandwich using another biscuit.

7. Take your sandwich biscuit and dunk half into the bowl of melted strawberry chocolate. Wait until that sets slightly and drizzle over the white chocolate and sprinkle a few strawberry pieces.

8. Leave to set for 20 minutes and the enjoy
