● 1 large egg
● 1 ½ tsp lime juice
● Zest of one lime
● 315g plain flour
● ¾ tsp salt
● 1 tsp baking powder
● 1 tsp bicarbonate soda
● 200g white chocolate chunks/coarsely chopped white chocolate
Equipment:
Tala Stainless Steel Citrus Zester
Tala Performance Baking Tray 39cm x 27cm
Method
- Line 2 baking trays with parchment paper.
- Whisk together the flour, salt, baking powder and bicarbonate soda and set aside.
- Using a mixer, combine the butter and sugar until pale and creamy.
- Add in the egg, lime juice and zest and mix until everything is incorporated.
- Mix in the dry ingredients (flour etc.) until combined and then stir in 180g of the white chocolate until just combined.
- Use a cookie scoop to scoop about 12 equal balls of dough, roll into a ball and place on the baking tray, leaving space between each ball. Place the trays in the fridge for 30 minutes.
- Meanwhile, preheat the oven to 180°C.
- Bake in the preheated oven for 10-12 minutes until slightly golden. As soon as they are out of the oven, place the remainder of the chocolate chunks evenly into each cookie, you might also need to use a large circle cookie scoop to scoot the cookies into a perfect circle.
- Sprinkle some extra lime zest on top.
- Enjoy!
