Banana Bread Granola
This Banana Bread Granola brings together the comforting flavours of ripe banana, gentle spice, and golden oats, baked until perfectly crisp. It’s an easy, fuss-free recipe that turns overripe bananas into something special - ideal for breakfast with yoghurt, sprinkled over fruit, or enjoyed straight from the jar.

Ingredients:
2 ripe bananas
3 cups rolled oats
1/2 cup hazelnuts
1/2 cup almonds, chopped
1/2 cup cashew nuts, chopped
1/3 cup maple syrup
1/4 cup vegetable oil
3 tbsp brown sugar
1/2 tbsp ground cinnamon

Method:
1. Preheat the oven to 180°C/160°C fan/gas mark 4.
2. Add the bananas to a large mixing bowl and mash with a fork. Add the maple syrup and vegetable oil and mix until combined.
3. Add the rolled oats, nuts, sugar, cinnamon and pinch of salt and mix with a spatula until well combined.
4. Tip the granola mixture onto a large baking tray, lined with greaseproof baking paper, and spread evenly with the help of a spatula or the back of wooden spoon.
5. Bake for 30 minutes, stirring halfway through. Reduce the oven temperature to 140°C/120°C fan/gas mark 1 and carry on baking for a further 10 mins.
6. Leave the granola to cool down completely before storing it in an airtight container.
7. Serve with milk or yogurt. Enjoy!
