Cherry Crumble Cake Bars

Ingredients:
1&½ cup flour
1 teaspoon baking powder
1/2 cup butter, softened
1/2 cup granulated sugar
Pinch of salt
400g cherries, pitted and halved
1 lemon, juiced
2 tablespoons cornstarch or flour

To finish
2 tablespoons granulated sugar (optional)

Method:
1. In a medium mixing bowl, stir together cherries, cornstarch/flour and lemon juice. Set aside.
2. In a large mixing bowl, stir together softened butter and sugar.
3. Add flour, baking powder and salt and work with your fingertips until the mixture resembles crumbs.
4. Add 3/4 of the mixture to a 29cm x 20cm baking tray, previously greased and lined with greaseproof baking paper. Press the crumb mixture down with your hands.
5. Add the cherry filling and spread over the base.
6. Sprinkle the remaining crumb mixture over the cherries.
7. Sprinkle some extra sugar (optional).
8. Bake in a preheated oven to 180°C/160°fan/gas mark 4 for 30 minutes, until golden.
9. Let cool down completely before slicing.
