Gingerbread Blondies

Ingredients:
175g unsalted butter, melted
125g light soft brown sugar
3 large eggs
275g plain flour, sifted
150g white chocolate chips
1 teaspoon baking powder
1&½ teaspoon ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground clove
Pinch of salt
To finish:
50g white chocolate chips
Method:
1. Preheat the oven to 180°C/160°C/gas mark 4.
2. In a large mixing bowl add the melted butter and sugar and beat until smooth.
3. Add the eggs, one at a time, and mix well with the help of a spatula.
4. Fold in the flour, baking powder, salt, ginger, cinnamon, nutmeg and cloves.
5. Add the white chocolate chips and mix until well combined.
6. Pour the mixture into a 23cm x 23cm baking tray, previously greased with butter.
6. Bake for about 20 mins or until it's slightly wobbly in the middle.
7. Let cool down completely.
8. Melt the white chocolate chips. Transfer the melted chocolate to a piping bag, cut off the tip then drizzle over the blondies.
9. Let the chocolate harder before cutting out 16 squares.
