Homemade Bagels
There’s nothing quite like the aroma of freshly baked bagels filling your kitchen. With their perfectly chewy texture and golden, glossy crust, these homemade bagels are a true bakery-style treat you can make right at home. Whether you enjoy them plain, topped with sesame seeds, or generously spread with cream cheese, this recipe gives you that classic bagel experience.

Makes 10
Ingredients:
475g strong white bread flour
300ml lukewarm water
2 tbsp brown soft sugar
1 teaspoon salt
1 sachet fast action dried yeast
1 teaspoon baking soda
1 egg white
Seeds of your choice

Method:
1. In the bowl of a stand mixer fitted with a dough hook attachment, whisk the warm water, sugar and yeast together.
2. Add the flour and salt, and knead on a low speed for 2 mins then on full speed for 3-4 mins.
3. Cover with a tea towel and leave to prove in a warm place for a few hours or until doubled in size.
4. Line two large baking tray with greaseproof baking paper. Set aside.
5. Turn the dough out onto a lightly floured surface and divide the dough into 10 equal pieces. Shape each piece into a ball. Make a hole in the centre of each ball. Place the bagels onto the 2 baking trays and leave to rest for 30 mins.
6. Fill a large pot of water, add the baking soda. Bring the water to a boil over high heat, then reduce heat to medium heat. Add 2-3 bagels in at a time. Cook the bagels for 1 minute, then use a spatula to flip them over and boil for a further minute. Get the bagels out of the water and place them back on the baking trays.
7. Brush the bagels with the egg wash then sprinkle with seeds or leave them plain.
8. Bake im a preheated oven to 220°/200°fan/gas mark 6 for 20 minutes until golden brown.
9. Let cool down on a wire rack before serving.
