Mango Coconut Loaf Cake
Mango Coconut Loaf Cake is a slice of tropical sunshine in every bite. Bursting with sweet, juicy mango and complemented by the delicate flavour of coconut, this soft and moist loaf is perfect for summer gatherings, afternoon tea, or a simple sweet treat. Finished with a light coconut topping, it's an easy bake that brings a taste of the tropics straight to your kitchen.

Equipment:

Ingredients:
225g self raising flour
1/2 tsp baking soda
80ml coconut milk
25g desiccated coconut shavings
100g demerara sugar
120ml vegetable oil
4 large eggs
125g mango puree

Method:
1. Preheat the oven to 180°C/160°C fan/gas mark 4.
2. Add the wet ingredients and the sugar sugar to a mixing bowl and mix. Fold in the flour, bicarbonate of soda and the desiccated coconut.
3. Pour the batter into loaf tin, previously lined with a greaseproof baking liner and smooth out the top with a spatula.
4. Bake for 35 minutes, or until a wooden skewer inserted into the center comes out clean.
5. Let the cake cool down in the tin before transferring to a chopping board.
6. Sprinkle with lots of icing sugar before serving.
