Ingredients:

280g plain flour
2 large eggs
75g caster sugar
100g unsalted butter, softened
½ teaspoon baking powder
Pinch of salt
Zest of 1 lemon
6 tbsp strawberry jam
6 tbsp apricot jam


Method:
1. Preheat the oven to 180°C/160°C fan/gas mark 4.
2. In a large mixing bowl whisk the eggs, butter and sugar.
3. Add the lemon zest, baking powder, salt and, a bit at the time, the flour. Work with your hands until you get a smooth dough.
4. Divide the dough into 12 equal balls, but keep a bit of the dough for decorating.
5. Flatten each ball into a disk, then transfer each disk in the pits of a muffin tray.
6. Fill each mini tart with a tbsp of strawberry or apricot jam.
7. Use the leftover dough to add some decorations to the tarts.
8. Bake for 13-15 mins.
9. Enjoy!
