Plum and Almond Tart

Ingredients:
Base
225g plain flour
60g caster sugar
125g unsalted butter
1 egg
1 teaspoon vanilla extract
Pinch of salt
Frangipane
125g unsalted butter, softened
100g caster sugar
2 large eggs
150g ground almonds
2 tspb plain flour
1 teaspoon vanilla extract

To finish
5-6 plums, sliced
2 tbsp demerara sugar
To serve
Icing sugar
Vanilla ice cream

Method:
1. Mix together the sugar, flour, and salt. Add the butter, egg, and vanilla extract. Work with your hands until you get a smooth dough. Cover with clingfilm and refrigerate for 30 mins.
2. Beat the sugar and butter together in a large mixing bowl. Fold in the vanilla extract, almond flour, plain flour and eggs. Mix well until combined, then set aside.
3. Roll the pastry to a 0.5mm thickness. Cover a 20 cm tart tin with the rolled out pastry. Poke the base with a fork.
4. Fill the tart base with the frangipane, smooth with the help of a spatula.
5. Top with plum slices, nicely arranged, and sprinkle with demerara sugar.
6. Bake in a preheated oven to 180°C/160°C fan/gas mark 4 for 45 mins.
7. Let cool down then dust with icing sugar.
8. Serve with vanilla ice cream.
