Savoury Puff Pastry Squares
Savoury puff pastry squares are a delicious and versatile appetizer or snack. Here's a simple recipe you can try at home!
Ingredients
● 1 x sheet puff pastry
● 12 tbsp pesto of your choice (I used red pepper and ricotta)
● 200g cherry tomatoes
● 200g asparagus spears
● 2 jarred roasted red peppers
● Splash of olive oil
● Bunch of fresh basil
● 150g mozzarella (ball)
● 30g parmesan cheese

Method
1. Preheat the oven to 200°C.
2. Chop up your cherry tomatoes, asparagus, basil leaves and red peppers and mix together in a bowl with a splash of olive oil, salt and pepper.
3. Roll out the pastry onto a floured surface and cut into 6 equal pieces. Dollop on 2 tbsp of the red pepper pesto and spread over the pastry squares, leaving a 2cm border. Arrange the vegetable mixture on top of the pesto and then add slices of mozzarella.
4. Carefully transfer each piece to a baking tray lined with parchment paper.
5. Bake in the preheated oven for 20-25 minutes until golden brown.
