Strawberry and Lemon Blondies
Sweet, bright, and perfect for the warmer months, these Strawberry and Lemon Blondies are a fresh twist on a classic bake. Soft, buttery blondie sponge is paired with bursts of juicy strawberries and a hint of zesty lemon, creating a balance of sweetness and citrus that feels light yet indulgent. Makes 9

Equipment:

Ingredients:
100g unsalted butter
200g white chocolate chips
100g strawberries, washed and chopped
2 large eggs
Zest of 1 lemon
75g caster sugar
2 tbsp honey
125g plain flour
1/2 teaspoon baking powder

Glaze
100g icing sugar
2 tbsp water
Pink food colouring

To finish
Freeze - dried strawberries

Method:
1. Add half the chocolate, honey and butter to a medium non-stick frying pan. Let the chocolate melt over a low heat.
2. Add the sugar and mix until it has completely dissolved.
3. Remove from the heat and add the eggs, one at a time, and mix well with the help of a spatula.
4. Fold in the flour and baking powder.
5. Fold in the remaining chocolate chips, strawberries and lemon zest.
6. Pour the mixture into a 20cm x 20cm baking tray, previously greased with butter.
7. Bake in a preheated oven to 180°C/160°C fan/gas mark 4 for about 20 mins. Leave to cool down in the tray.
8. In a small mixing bowl combine together the icing sugar, water and food colouring. Drizzle over the cake.
9. Sprinkle with freeze dried strawberries.
10. Let the glaze dry out before portioning it into 9 squares.
