Strawberry Puff Pastry Squares

Strawberry puff pastry squares are a delightful and easy-to-make treat, perfect for any occasion.

Ingredients

● 1 x sheet puff pastry

● 200g cream cheese

● 50g caster sugar

● 1 tsp vanilla bean paste

● 250g strawberries (cut into slices)

● ½ tbsp cornflour

● 1 medium egg (egg wash)

● 60g icing sugar

● 1tbsp lemon juice

● ½ tsp vanilla extract

Method

1. Preheat the oven to 200°C.

2. Mix together the cream cheese, caster sugar and vanilla bean paste using a hand held electric mixer, until smooth.

3. Combine the sliced strawberries and cornflour in a bowl and mix together.

4. Roll out the pastry onto a floured surface and cut into 6 equal pieces. Dollop on a spoonful of the cream cheese mixture and spread over the pastry squares, leaving a 2cm border. Arrange the strawberries on top of the cream cheese and then brush the edges with egg wash.

5. Carefully transfer each piece to a baking tray lined with parchment paper.

6. Bake in the preheated oven for 20-25 minutes until golden brown.

7. Once baked, and slightly cooled, mix together the icing sugar, lemon juice and vanilla extract until you have a runny consistency - you may need to add more lemon juice. Drizzle over the warm pastry squares and enjoy!
