Tala Lava Cakes

Equipment:

Ingredients:
125g 70% dark chocolate
100g unsalted butter
50g caster sugar
2 eggs and 2 yolks
1 teaspoon vanilla extract
25g plain flour
200 ml whipping cream, to serve

Method:
1. Place the butter and the chocolate in a bowl and gently melt over bain-marie.
2. In the meantime add the eggs, egg yolks, sugar and vanilla to a mixing bowl and whisk until you get a mousse-like consistency.
3. Pour the melted chocolate over the egg mixture, add the flour and gently fold everything together with a spatula for a few mins until well combined.
4. Equally divide the mixture between 4 ramekins.
5. Bake in a preheated oven to 200°C/180°C fan for 11 mins.
6. Carefully remove them from the oven and let cool down for a few mins, as the glass will be very hot.
7. Dust with some icing sugar and serve with whipped cream.
