Vanilla and Chocolate Madeleines

125g plain flour, sifted 

2 large eggs

75g caster sugar

1&½ teaspoon vanilla extract 

100g unsalted butter, melted, plus extra for greasing 

¾ teaspoon baking powder 

Pinch of salt

80g milk chocolate 

White chocolate sprinkles



  1. Mix the flour, salt and baking powder in a small bowl. Set aside. 
  2. In a large mixing bowl whisk the eggs and sugar with an electric mixer until thick and fluffy.
  3. Beat in the vanilla until combined.
  4. Gently fold in the flour, salt and baking powder with the help of a spatula. 
  5. Add the melted butter and mix until well combined.
  6. Cover the bowl with cling film and refrigerate for 40 mins.
  7. Brush the madeleine tray with butter. Add a generous tablespoon of batter into each well.
  8. Bake in a preheated oven to 180°C/160°C fan/gas mark 4 for 10 mins.
  9. Transfer to a wire rack to cool down.
  10. Melt the chocolate then dip one-third of each madeleine in it. Add some chocolate sprinkles then leave to dry.
  11. Enjoy!
