Whipped Feta and Tomato Tart

Light, fresh, and bursting with Mediterranean flavour, this Whipped Feta and Tomato Tart is the perfect centrepiece for sunny lunches, picnics, or effortless entertaining. Serves 4
Equipment: 

Ingredients:
1 roll of puff pastry 
200g feta cheese
250g yogurt 
1 lemon, juiced 
4 tomatoes, sliced
Extra virgin olive oil
Salt, pepper to taste 
Fresh basil leaves

Method:
1. Roll out the puff pastry onto a large baking tray. Score a 2cm border around the edge of the sheet using a knife. 
2. Brush with milk, then bake in a preheated oven to 220°C/200°C fan for 15 mins until golden. 
3. In the meantime, add feta cheese, greek yogurt, olive oil, pepper and lemon juice to a medium bowl and blend until smooth.
4. Spread the whipped feta over the baked pastry. Top with sliced tomatoes. Season with salt and pepper and drizzle with oil.
5. Return to the oven for 10 mins.
6. Add fresh basil leaves just before serving.
7. Enjoy hot or cold!
